Easy Herb Tomato Soup

It has taken me 30 years into my life before I have made hommade tomato soup. Why? It is so simple and you likely have everything you need in your pantry. A handful of basic ingredients and in under 30 minutes, you have a fresh, healthy classic comfort meal.
Use canned diced tomatoes.
Now, if you have a surplus of fresh tomatoes, by all means use an equivalent amount of those. However, this is your reminder to stock up on this staple. I like to use a Muir Glen Organic but just about any variety will do.
Dried work very well.
I was inspired by a gift of dried basil from my mom's garden. You can adjust the herbs to your preference, or more chili flakes for a more heat.
Cashew cream makes a richer, creamier soup.
I think the subtle cashew flavor is perfect here, vs coconut or another cream. You can make a batch of this by soaking 1 cup of cashews in 1 cup hot water for 1-2 hours and then blend on high power until super smooth.

Roughly dice onion and garlic. In a medium soup pot, heat oil over medium low. Add onions, sauté for about 5-8 minutes or until softened. Add the garlic, and sauté covered for about another 3 minutes.

Add to cans of tomatoes with their juice, broth, and herbs and spices. Turn up the heat to medium. Stir, cover and simmer for about 10 minutes.

Using an immersion blender, blend the soup to desired consistency. For a creamier soup, add cashew cream, if desired. Serve and top with an extra drizzle of cream and fresh herbs if desired.
Instructions
1/2 large yellow onion
4 cloves garlic
2 cups vegetable broth
1 Tbsp dried oregano
1 Tbsp dried basil
1 Tbsp dried tyme
1/3 cup cashew cream (optional)
1/8 tsp red pepper flakes
1 Tbsp avocado or olive oil
2 16-oz cans of diced tomoatos
salt and pepper (to taste)
